Waldorf Salad

Waldorf salad is a refreshing, crunchy, creamy, sweet, healthy vegetarian salad from America. Made with crunchy fruits, nuts, and mayonnaise/ yogurt its a healthy summer treat.

Last year I shared the recipe of one of my favorite salads from Middle East-Tabbouleh. In that post, I mentioned a salad bar that was near my previous office. Most of my favorite salad recipes are from that salad bar only. Till last year, I survived the summers of Dubai eating salads from there almost every working day.

One of my favorite salads from that salad bar was Waldorf salad which was my lunch for almost 2 years. Now I don't work in that same organization so I no longer get the chance to enjoy those salads.

Last weekend was really hot here in Dubai and I wanted to eat something that’s refreshing, sweet but healthy and it reminded me of Waldorf salad from that salad bar. That was the first time I made it at home and it was exactly the way I am used to eating it –refreshing, crunchy, creamy, sweet, and delicious.

Waldorf salad is an American salad that got its name from Waldorf-Astor hotel, New York, where it was served for the first time in 1896 during a charity ball event.

Its generally made with apples, grapes, celery, walnuts, mayonnaise/ yogurt and is served on a bed of lettuce.

Though the original Waldorf salad recipe had mayonnaise and walnuts that were not added to it, now people also add yogurt and walnuts to this salad. I really love the combination of apples and walnuts in it.

I prefer Waldorf salad with yogurt as it's healthier and lighter. In this recipe, I have also added some mayonnaise. You can use only yogurt, only mayonnaise, or a combination of yogurt and mayonnaise, whatever satisfies your taste buds.

If you use only yogurt then adjust the amount of lemon juice depending on the tartness of yogurt you are using.

Also, for me, the sweetness of fruits is enough in this salad but Amit prefers it with some sugar so I added it. You can skip the sugar if you want.

Ingredients

  • 2 large apples
  • 2 stalks celery
  • 1 cup grapes
  • 1/2 cup chopped walnuts
  • 1/2 cup thick yogurt
  • 2 tbsp mayonnaise
  • Juice of 1/2 lemon
  • 1 tbsp sugar optional
  • Freshly ground pepper- as per taste
  • Lettuce

Instructions

  • • Cut the apples and celery in small pieces and grapes in half.
  • • In a bowl mix yogurt, mayonnaise, sugar(if adding, lemon juice and crushed pepper. Mix well.
  • • Add the chopped fruits and walnuts to the yogurt dressing and mix everything. Keep it in the fridge till serving time.
  • • For serving, arrange lettuce on a serving bowl and put the salad on top of it. Enjoy!
