Moroccan roasted potatoes- a delicious and easy to make side dish spiced with the warm flavors of paprika, cumin, black pepper, and garlic. These spiced potatoes are vegan and gluten-free.

I have never tasted a potato dish that doesn't taste good and maybe that's the reason why almost everyone in this world loves potatoes.

It’s one of the most ancient vegetables that humans started eating. Even now it’s considered the fifth most important crop in the world. The other crops ahead of it are wheat, corn, rice, and sugar cane.

It’s hard to imagine this world without potatoes and all the wonderful dishes made with them.

Every country has its own roasted potato recipes and today I am sharing Moroccan roasted potatoes that are flavored with the spices of the region.

It’s a great vegan and gluten-free side dish recipe that's perfect for every occasion.

What goes in Moroccan roasted potatoes?

To make these Moroccan-style spicy roasted potatoes, you will need the ingredients shown below:

Ingredient notes

  1. Potatoes: You can use any type of potato for roasting. They all taste delicious. You can make them with or without skin. Even baby potatoes can be used in this recipe.
  2. Ground cumin: To make ground cumin at home, dry roast them in a pan until they become fragrant. Allow to reach room temperature and then grind to make a fine powder.
  3. Paprika: Feel free to use any red chili powder of choice depending upon how much heat you want to add.
  4. Garlic powder: Instead of garlic powder, minced garlic can also be used.

How to make (step by step process)?

Step 1: Wash and peel potatoes. Cut into bite-size cubes.

Step 2: In a large bowl put vegetable bouillon cubes, paprika, garlic powder, cumin powder, ground black pepper, salt, olive oil, and lemon juice. Mix until the bouillon cubes get dissolved.

Step 3: Add potato cubes.

Step 4: Toss until the spices get evenly coated on the potato cubes.

Step 5: Spread evenly and in a single layer on a baking tray lined with a baking sheet.

Step 6: Bake in a preheated oven at 200°C (around 400°F) for around 30 minutes or until the potatoes are nicely cooked and turn golden brown. Stir once halfway through baking time. Garnish with chopped cilantro.

How to serve?

Serve these spiced potatoes as a side dish with any meal, they go well with almost everything.

You can also add them to your salads or stuff them inside wraps.

Storing tips

To store these Moroccan potatoes, transfer them to an airtight container and refrigerate them for up to 4 days.

How to reheat roasted potatoes?

To reheat roasted potatoes, spread them in a single layer on a baking tray lined with a baking sheet. Cover with aluminum foil and roast in a preheated oven at 200°C (around 400°F) for around 15 minutes or until nicely heated.

Recipe tips and tricks

  • Cut the potatoes into a size slightly bigger than bite-size pieces as they will shrink on getting roasted.
  • You can leave the skin of potatoes on if you prefer roasted potatoes with skin.
  • For some heat and more flavor, you may add 1-2 teaspoons of harissa paste.
  • If making cumin powder at home, dry roast the cumin seeds for a few minutes i.e. until they become fragrant, allow reaching room temperature, and then grind to make a powder. While roasting, don't leave the cumin seeds unattended, they get burned very fast.
  • Feel free to add other seasonings of choice to flavor these potatoes.

Can roasted potatoes be frozen?

Yes, you can freeze roasted potatoes. For that, first spread them in a single on a baking tray lined with a baking sheet. Freeze for 3-4 hours then transfer to a freezer-safe container or zip lock bag. Freeze upto 6 months.

Ingredients

  • 1 kg potato around 7 medium sized potatoes
  • Juice of 1 lemon around 4-5 tablespoons
  • 3-4 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • ½ teaspoon ground black pepper
  • 2 cubes veg bullion
  • Salt to taste
  • Chopped cilantro for garnishing

Instructions

  • Wash, peel, and cube the potatoes.
  • Put veg bouillon cubes, olive oil, lemon juice, salt, pepper, paprika, garlic powder, and cumin powder in a bowl. Mix until the bouillon cubes get dissolved.
  • Add potato cubes and toss until the spices get evenly coated on all the cubes.
  • Spread the potato cubes in a single layer on a baking tray lined with a baking sheet.
  • Bake in a preheated oven at 200°C (around 400°F) for around 30 minutes or until the potatoes are nicely cooked and turn golden brown. Stir once halfway through baking time.
  • Once done, take the roasted potatoes out of the oven and allow reaching room temperature. Garnish with chopped cilantro. Enjoy!

    I made these potatoes today to help me forget about the corona virus(fill in the day when we are on lock down. I made morrocan lamb and couscous aswell. Everything turned out great.
    My family really enjoyed these potatoes. It the first time we tried them and won’t be the last. We hope. Everybody stay indoors as much as possible when this virus lasts.

    The only time I tend to use veg bullion is when I need to make some soup or curry. Adding to oven roasted potatoes is a wonderful idea. Must be so tasty.
