About the recipe

If you enjoy mushrooms, this air fryer mushroom recipe is a must-try. The air fryer brings out their rich, savory flavor and gives them lightly browned edges without needing much oil.

Whether you're making a quick weeknight dinner or looking for an easy side dish for guests, these air-fried mushrooms fit the bill perfectly.

I make mushrooms regularly, and using the air fryer is easily one of my favorite ways to cook them. It's quick, hands-off, and the results are always delicious.

The hot circulating air helps them develop a rich, savory flavor while keeping them tender and succulent inside.

This recipe is perfect for busy weeknights because it requires very little prep work. Just season the mushrooms, pop them into the air fryer, and let it do the work for you.

Another thing I love about this recipe is that it works with almost any type of mushrooms. White button mushrooms, crimini mushrooms, portobello mushrooms, shiitake mushrooms, and oyster mushrooms all turn out wonderfully.

Whether you're serving them alongside dinner, adding them to salads, or piling them onto toast, these air fryer mushrooms are a simple way to add extra flavor to any meal.

What's needed to make air fryer mushrooms

You'll only need a few basic ingredients to make this air fryer mushroom recipe. Chances are you already have most of them in your kitchen.

Ingredient notes and substitute suggestions

  • Mushrooms: I have used white button mushrooms, but cremini (baby bella), portabella, shiitake, or oyster mushrooms also work well.Try to choose firm, fresh mushrooms from the grocery store. Avoid mushrooms that feel slimy or have dark spots. Use fresh mushrooms, not dried ones. If using larger mushrooms, you can cut them into quarters so they cook evenly. Smaller mushrooms can be left whole.
  • Lemon: Lemon juice adds a freshness to this dish. Don't skip it.
  • Seasonings: To flavor these mushrooms, I have used mixed Italian seasoning, garlic powder, salt, and black pepper. You can also use other seasonings like dried oregano, basil, thyme, red pepper flakes, or rosemary. Fresh herbs and fresh garlic can also be used to flavor it.
  • Olive oil: Use good-quality extra virgin olive oil. If you are not vegan, then butter can also be used. One of the best things about air frying is that you need much less oil than traditional roasting or deep frying.

Other ingredient details and nutritional information are shared in the recipe card.

They are incredibly versatile and pair well with many dishes.

They are also delicious served alongside grilled tofu, veggie burgers, or other favorite meals.

Add them to grain bowls, salads, wraps, or sandwiches.

Spoon them over toasted bread for an easy appetizer.

Use them as a topping for pizza, burgers, or baked potatoes.

How to store and reheat?

Store leftover air fryer mushrooms in an airtight container in the refrigerator for up to 4 days.

Cooked mushrooms can be frozen for up to 2 months. Allow them to cool completely before transferring them to freezer-safe containers or bags.

Reheat in the air fryer at 350°F (175°C) for 2–4 minutes until warmed through. You can also reheat them in a skillet over medium heat.

Meal prep tips

  • Clean and trim the mushrooms ahead of time to make cooking even quicker.
  • Mix the seasoning blend in advance and store it in a small container.
  • Cook a larger batch and use the mushrooms throughout the week in bowls, salads, sandwiches, and pasta dishes. Cook it in batches rather than overcrowding the basket.
  • Pair with other air fryer vegetables for easy meal prep lunches and dinners.

Recipe tips, tricks, and variation suggestions

  • Avoid overcrowding the air fryer basket. Mushrooms cook more evenly when arranged in a single layer.
  • Shake the basket halfway through cooking for even browning.
  • Smaller mushrooms can be left whole, while larger ones should be cut into bite-sized pieces.
  • Non-vegans may add grated Parmesan cheese during the last minute of cooking for extra flavor.
  • Toss with balsamic vinegar after cooking for a delicious, tangy finish.
  • Add a pinch of smoked paprika or red pepper flakes for a smoky or spicy variation.
  • For a garlic lover's version, add freshly minced garlic cloves along with the seasonings.
  • For an Asian-inspired version, add a splash of soy sauce or coconut aminos before air frying.
  • If you like crispy edges, cook the mushrooms for an extra minute or two.
  • Experiment with different herbs and spices to create different flavors every time you make them.
  • The cooking time may slightly vary depending on the size of your air fryer.

Frequently asked questions

Why did my mushrooms release so much liquid?

Mushrooms naturally contain a lot of water. As they cook, they release moisture. Using high heat and avoiding overcrowding helps excess moisture evaporate.

Can I make air fryer mushrooms without oil?

Yes, the mushrooms will still cook well without oil, although a small amount helps the seasonings stick and improves browning.
