One of my favorite cakes is carrot cake and if you also love this cake but can’t enjoy it regularly because you believe in eating healthy then my today’s recipe – Vegan carrot cake oatmeal will help you in managing your carrot cake craving in a healthier way.

We are lucky to be living in a time where the food has crossed all the boundaries and is no longer restricted to the region of its origin.

When my grandparents were young, the food in their kitchen was mainly the regional cuisine of Uttarakhand, made using locally grown ingredients. Then my parent’s kitchen crossed the boundaries within India and we grew up eating food from all over India. As kids, our generation got exposure to a few international treats like English breakfast, French onion soup, Indo- Chinese, pizza, pasta, soufflés, different cakes, pastries, etc.

But now time has changed completely. All the ingredients are available everywhere at affordable prices and people have become more open to new tastes and cooking methods. Recipes from another world are no longer reserved for special occasions and have become a regular in daily cooking.

People have become so busy that they also pick up quick recipes from different cuisines, for convenience. One such recipe is oatmeal which I believe has become a global breakfast. I never saw my grandparents having oats in breakfast.

While working in my previous company with a multinational team, consisting of people from India, China, Singapore, UAE, UK, Egypt, Africa, Turkey, etc, I noticed that our breakfast was common – Oatmeal, that too almost every day.

I also like oats in my breakfast (especially because it’s easy to make). I also love trying making oats in different ways and today I am sharing one of my favorite ways of enjoying oats.

Vegan carrot cake oatmeal

Ingredients

  • 2 cups old fashioned rolled oats
  • 4.5 cups unsweetened vegan milk
  • 1 cup grated carrot
  • ¼ cup chopped walnuts
  • ½ teaspoon cinnamon powder
  • 5 tbsp sugar You can use any sweetener of your choice

Instructions

  • In a pan add the oats, milk, grated carrot, chopped walnuts, cinnamon powder, and sugar. Cook for 5 minutes or till your oats are ready, stirring regularly.
  • Garnish with some chopped walnuts, cinnamon powder and enjoy!
