Mango mug cake is an easy and delicious dessert recipe that gets ready in just 5 minutes from start to finish. If you are looking for a quick recipe to satisfy your sudden sweet cravings then this mango mug cake recipe is perfect for you. It's an egg and dairy-free recipe.

I generally avoid baking a whole cake at home because I know my husband who has a massive sweet tooth can finish the entire cake in a single day.

So, I prefer making mug cakes. They are very easy to make, get ready within minutes, taste equally delicious, and help you in portion control.

And, mango mug cake is one of my favorite mug cake recipes because I love mangoes.

What's needed to make mango mug cake?

To make a mango mug cake in the microwave, you will need the following ingredients:

Ingredient notes and substitute suggestions

  • Mango pulp: I have used canned mango pulp. You can easily make it at home too by peeling, deseeding, and blending the mangoes. If making mango pulp at home, use a sweet variety of mangoes, not sour. Also, try using a less fibrous mango. If the mango has fibers, strain the pulp after blending the mangoes to get a smooth mango puree.
  • Milk: Feel free to use any milk of your choice. Creamier milk gives a richer cake.
  • Canola oil: You can use any neutral flavored oil. Room-temperature butter can be used too.

How to make (step by step instructions)?

Step 1: Put the all-purpose flour, sugar, salt, and baking powder in a microwave-safe mug.

Step 2: Add mango pulp, milk, and oil to it.

Step 3: Mix until you get a smooth batter.

Step 4: Microwave for around 2 minutes and 30 seconds or until the cake is nicely baked.

Toppings options

You can enjoy this mango mug cake just like that or make it fancier with some toppings. Some of my favorite toppings for mango mug cake are:

  1. Chopped mangoes
  2. Drizzle mango pulp
  3. Whipped cream
  4. Chopped nuts
  5. Sprinkles

You can add any one of them or combine a few of them to make a fancier mango mug cake like top it with whipped cream, chopped mangoes, and sprinkles.

Storing and reheating tips

It's hard to resist these mini cakes and you will finish them off as soon as they come out of the oven. However, if you want to store them for a longer period, cover the mugs with cling wrap or aluminum wrap and then store them in the fridge for 3-4 days.

You can enjoy them chilled, at room temperature, or warm too.

If you prefer to enjoy them warm, microwave for a few seconds.

Recipe tips and tricks

  • If you are using store-bought mango pulp make sure it's without added sugar. If it is with sugar then add more sugar carefully.
  • If you are making pulp at home, make sure to use a sweet and less fibrous variety of mango.
  • Mix the batter properly and make sure the dry ingredients are not stuck at the bottom of the mug.
  • Use a slightly small and shallow coffee mug for making a mug cake. If you use a very large and deep mug, the cake will stay at the bottom of the mug and won't look very pleasing. However, don't pick a very small mug also otherwise the cake batter will start overflowing once you start microwaving it. 
  • You can also add some chopped mangoes or nuts to the mug cake batter.
  • Different ovens give different results. So, keep an eye on the cake after 2 minutes and microwave further only if required.
  • Don't microwave for a very long period otherwise, the cake will become very chewy.

Why my cake turned out rubbery?

The most common reason for getting a rubbery mug cake is overcooking. Different microwaves give different results so, keep an eye on your cake after 2 minutes and microwave further only if the cake is not cooked.

Ingredients

  • 4 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar adjust to taste
  • ½ teaspoon baking powder
  • ⅛ teaspoon salt
  • 3 tablespoons mango pulp without added sugar
  • 3 tablespoons any milk of choice
  • 2 tablespoons canola oil

Instructions

  • Put all the dry ingredients in a mug. Whisk.
  • Add all the wet ingredients and mix until you get a smooth batter.
