Comforting, delicious, and healthy, this vegan cabbage soup is a great option for people on their weight loss journey. It's very easy to make and gets ready in just 40 minutes.

Amit and I have been traveling a lot for the last few months. Side effects-unhealthy eating and a few extra kilos on the waistline :(. We really find it difficult to stick to a disciplined and healthy eating routine while traveling especially when the hotels provide buffet meals.

So after coming back from every trip, I cook and eat healthy meals to detoxify.

Today's recipe for weight Watchers Cabbage soup is one such recipe that many people claim to have exceptional benefits in weight loss.

Making this vegetarian cabbage fat burning soup is very easy and you need ingredients that are very easily available. Feel free to add and remove vegetables and seasonings depending upon what's available to you.

  • Cabbage
  • Onion- use red, yellow, or white whichever variety you have.
  • Carrot
  • Celery
  • Garlic: Garlic powder can be used too.
  • Lime juice
  • Tomato
  • Spinach: Fresh/ frozen both are fine. Baby spinach can be used too. Feel free to replace spinach with any leafy green of your choice
  • Seasoning: Salt, pepper, dried thyme, chili flakes
  • Olive oil/ any cooking oil of your choice
  • Tomato paste
  • Fresh coriander leaves: Dill also tastes amazing with cabbage. You can use any fresh herb of your preference.
  • Vegetable stock/ water

More seasoning options

I love vegetables and don't find eating vegetable-rich dishes difficult. That's the reason I have used very basic seasoning to flavor this cabbage soup. However, if you don't like vegetables and are new to healthy eating, you can try them with different seasonings.

I am sharing a few seasoning options below:

  • Chili lime seasoning
  • Mushroom powder
  • Asian sweet ginger garlic seasoning
  • Asian 5 spice powder
  • Onion powder
  • Dry ginger
  • Smoked paprika
  • Coriander powder
  • Roasted cumin powder
  • Curry powder
  • Dried dill
  • Nutmeg

Basically, you can use any seasoning of your choice to make this soup taste even better.

Type of cabbage to use

The best cabbage to be used in this soup is green cabbage. However, you can also make it with purple or savoy cabbage.

Can it be made with frozen vegetables?

Yes, this recipe for cabbage soup is very flexible and can also be made with frozen vegetables.

What to serve with it?

If you are trying this soup aiming for weight loss I would recommend not having anything with it because then it won't serve the purpose.

Otherwise, you can serve it with garlic bread, roasted potato wedges, toasted bread, or dinner rolls.

Does it help in weight loss?

I have never followed a cabbage soup diet and am not a dietitian too so can’t comment on how true the claims of its fat-burning properties are. However, the calorie content of this soup makes me positive about its benefits.

Also, based on my personal experience I definitely prefer regularly having this healing cabbage soup after every trip because of the following reasons:

  1. I feel light after consuming this soup which is such a relief after all the unhealthy eating which causes acidity and bloating.
  2. It’s very easy to make and doesn’t need much effort to cook. After a long exhausting trip, unpacking all the bags and re-arranging the home, I don’t feel like spending hours in the kitchen.
  3. Last but not least – it tastes delicious.

How long does it last in the fridge?

If you are keeping this vegetable soup in the refrigerator, put it in an air-tight container and store in the fridge. It will be fine for around 4 days.

Can you freeze it?

Yes, this soup freezes well. Just put it in serving size containers and freeze. It will be fine for 3-4 months. Reheat when you want to serve.

Recipe tips & tricks

  • Instead of shredding, you can also chop the cabbage.
  • Don't overcook the cabbage otherwise, it will lose its taste and texture
  • You can also add more ingredients like mushroom, tofu, bean sprouts, or bok choy.
  • Feel free to add more vegetables and seasoning of your choice.
  • To add heat to this vegan cabbage soup, add finely chopped chili peppers or hot sauce.
  • The combination of fresh dill and cabbage tastes very good. So, if you have dill add it to season this soup.
  • Vegetarians may serve this cabbage soup with a dollop of sour cream on top.

Vegan cabbage soup

Ingredients

  • 3 cups shredded cabbage
  • 1 cup chopped carrots
  • 1 cup finely chopped spinach fresh/ frozen
  • 1 medium-sized tomato finely chopped
  • 1 medium-sized onion finely chopped
  • 1 stalk celery finely chopped
  • 2-3 garlic cloves minced
  • Juice of ½ a medium-sized lime adjust as per taste
  • 2 tablespoons tomato paste
  • ½ teaspoon dried thyme
  • ½ teaspoon chili flakes adjust as per taste
  • ground black pepper as per taste
  • Salt as per taste
  • 6-7 cups vegetable stock/ water
  • ½ tablespoon olive oil
  • ¼ cup fresh coriander leaves for garnishing optional

Instructions

  • Heat oil in a pot. Add onion and garlic. Saute until the onion starts turning brown.
  • Add chopped carrots and celery. Saute for 3-4 minutes.
  • Add chopped tomato, salt, pepper, chili flakes, and thyme. Mix and cook until the tomatoes turn soft and mushy.
  • Next, add tomato paste and saute for a minute.
  • Add cabbage and saute for another minute.
  • Add vegetable stock, mix well, and cover the pot. Let the soup simmer on low flame for around 15 minutes.
  • Add spinach and cook for 5-6 minutes or until the spinach gets wilted. Switch off the gas.
  • Finally, add lime juice and chopped coriander leaves. Enjoy!
